Menu Feb 26-March 3

Does anyone else have troubles being true to their menu?  Cyber accountability (posting it online) has helped…but last week-there were several days that I just didn’t feel like eating what I had planned.  Boo!  I’m trying to make the things that I planned to make and haven’t over the past couple weeks.  Here is the proposed menu for this week.

Sunday-Cajun Chicken

Monday-Chicken chowder


Wednesday-lentil soup

Thursday-No peekie chicken


Saturday-free day


Cajun chicken pasta-from

4 oz linguine

2 chicken breasts

2 t cajun spice

2 T butter

1 Red pepper

1 green pepper diced

1 green onion cut up

1 C heavy cream

¼ t basil

¼ t lemon pepper

¼ t salt

1/8 t garlic powder

1/9 t black pepper

¼ C parmesan cheese


  1. Bring a large pot of lightly salted water to a boil. Add linguini pasta, and cook for 8 to 10 minutes, or until al dente; drain.
  2. Meanwhile, place chicken and Cajun seasoning in a bowl, and toss to coat.
  3. In a large skillet over medium heat, saute chicken in butter until no longer pink and juices run clear, about 5 to 7 minutes. Add green and red bell peppers, sliced mushrooms and green onions; cook for 2 to 3 minutes. Reduce heat, and stir in heavy cream. Season the sauce with basil, lemon pepper, salt, garlic powder and ground black pepper, and heat through.
  4. In a large bowl, toss linguini with sauce. Sprinkle with grated Parmesan cheese

We have a lot of ground beef that I can freeze or use up in freezer meals or meals later in the week….hoping to use it up despite having a lot of Mexican food on the menu.

Menu January 29-February 4

We have a lot of potatoes needing to be used.  I think that will be a center of focus this week as I’m making freezer meals and cooking.   I also have a bunch of spinach that needs to be used.   Maybe I’ll have to make spinach puffs or something.

Sunday-Smoked Chicken stroganoff  Click for the recipe.  This was a 5 minute dinner because we had everything on hand.

Monday-Spinach Lasagna

Tuesday-Chili’s fajitas (still haven’t made these)

Wednesday-Veggie sandwiches

Thursday-Sesame chicken and something with potatoes

Friday-Breakfast Pizza (using more potatoes for the hashbrowns)

Menu January 8-14

So, look–it’s Saturday and I have my menu on here.  I guess I can check that off my goal list!  WAHOO!  Here is what’s cooking this week at the Craws this week!  I have a bunch of produce I got at the market.  I’m trying to implement more produce into our diet. As I’m trying things–I’ll post any recipes you MUST try! 🙂

Sunday-Breakfast for Dinner–I had planned to do cinnamon rolls for breakfast and appetizers for the rest of the day but I had done a whole lot of cooking for Christmas dinner and wasn’t up to it….so this is what we had.

Monday-Black beans and rice burritoes

Tuesday-Tacos–a little mexican heavy here…Love it!

Wednesday-Alfredo pasta with veggies

Thursday-Turkey pot pie–I have some turkey in my freezer that needs to be used.
