Does anyone else have troubles being true to their menu?  Cyber accountability (posting it online) has helped…but last week-there were several days that I just didn’t feel like eating what I had planned.  Boo!  I’m trying to make the things that I planned to make and haven’t over the past couple weeks.  Here is the proposed menu for this week.

Sunday-Cajun Chicken

Monday-Chicken chowder


Wednesday-lentil soup

Thursday-No peekie chicken


Saturday-free day


Cajun chicken pasta-from

4 oz linguine

2 chicken breasts

2 t cajun spice

2 T butter

1 Red pepper

1 green pepper diced

1 green onion cut up

1 C heavy cream

¼ t basil

¼ t lemon pepper

¼ t salt

1/8 t garlic powder

1/9 t black pepper

¼ C parmesan cheese


  1. Bring a large pot of lightly salted water to a boil. Add linguini pasta, and cook for 8 to 10 minutes, or until al dente; drain.
  2. Meanwhile, place chicken and Cajun seasoning in a bowl, and toss to coat.
  3. In a large skillet over medium heat, saute chicken in butter until no longer pink and juices run clear, about 5 to 7 minutes. Add green and red bell peppers, sliced mushrooms and green onions; cook for 2 to 3 minutes. Reduce heat, and stir in heavy cream. Season the sauce with basil, lemon pepper, salt, garlic powder and ground black pepper, and heat through.
  4. In a large bowl, toss linguini with sauce. Sprinkle with grated Parmesan cheese
