This last weekend was general conference and it was amazing!  If you missed it and would like to listen to a talk or a few or all of it, go here.  Truly inspiring!  Because conference weekends includes 4-2 hour sessions of listening to speakers-we’ve been trying to add a few new traditons to keep the kids looking forward to conference rather than loathing it.  I’ve decreed that each fall conference-we’ll do our fall decorating and we’ll be eating pumpkin waffles and syrup.  This year, both of these were a hit.  I thought I’d share the recipe for my pumpkin waffles!  YUM!

Here’s the recipe–from my friend Krista Shawcroft

2 C flour

2 T baking powder

1 T sugar

1 T cinnamon

1/2 t nutmeg

1/4 t coriander

1/4 t salt

Mix then add 4 egg yokes (save whites)

Then add:

1 C pumpkin

1 1/2 C milk

3/4 cube melted margarine

1 T vanilla

Beat egg white until stiff then add to batter.  Cook in waffle iron until golden brown.


1/2 C butter

1/2 C buttermilk

1 C sugar

1 T karo syrup

Mix ingredients in a sauce pan and boil.

Take off heat and add:

1 t baking soda

1 t vanilla.
